These healthy firecracker copy-cat, red, white, and blue fruit popsicles are easy to make, sweet, delicious, and sugar-free, making them the perfect fruit popsicle enjoy while celebrating 4th of July, Memorial day or even a summer cookout, guilt-free! The best part? They’re low-carb, keto, vegan, and diabetes friendly!

Nothing reminds me more of that period of time, just before summer at school, than eating firecracker popsicles and not having a care in the world during those hot days while waiting for my parents to pick me up as little kid (this is of course before I became home-schooled)!

Recently, I have been thinking back to those times, eating those star spangled popsicles with friends in that heat of Florida.

And so… with the upcoming 4th of July holiday next week, as I'm gearing up for a day of fun, making memories, hanging with my younger siblings, watching fireworks, and of course, coating myself in mosquito repellent (because Floridian mosquitoes anyone?!) I thought what better time than now to try out making those red, white and blue firecracker popsicles to share with my young siblings on 4th of July - with a healthy twist!

I mean… it’s hot outside and this holiday definitely screams for frozen treats, so all I had to do is find a way make to make them sugar free and healthy.

Classic firecracker popsicles and many store-bought fruit pops contain high fructose corn syrup and other high sugar, highly processed ingredients.

Making my own sugar-free firecracker pops…

It turns out after working on a recipe, that they’re incredibly easy and way more delicious than those classic firecracker pops that are full of artificial flavors, sweeteners and dyes = no food coloring needed… yaya!!

These red, white, and blue sugar-free fruit popsicles are easy to make, taste delicious, have dairy-free options for vegans, dye-free, keto friendly, low carb, sugar free and naturally-sweetened with just a touch of natural pure stevia making for a supremely healthy and “wow that’s scrumptious” Independence Day dessert.

The wonderful mixture of sweet strawberries top a creamy citrus center and ripe blueberry burst (or blackberry for our keto friends), create a fantastic cooling flavor combo, that is flavorful, sweet without the sugar and has a refreshingly delicious taste of freedom. 😊

Picking a mold for your sugar-free firecracker popsicles

I use a basic popsicle mold here, but a cute star popsicle mold would work even better to make these no-sugar pops look like the iconic store-bought brands.

They don’t take long to prepare, but when you plan to make these healthy popsicles, make sure you can be home for a while so you can freeze each layer properly.

Also, if you’re asking me why the blue is a “true blue”, that’s because the truth is you just can’t get that exact classic “blue” color with natural ingredients. We don’t want to be using nasty artificial flavorings here.

You can use blue spirulina powder (a nutrient-dense food) for a truer blue color. However I’m just fine with enjoying these pops with a just a blue-ish popsicle at the end, because they’re totally healthy, made with natural ingredients and free of added sugars and artificial dyes.

Red White & Blue Fruit Popsicles Recipe

Servings: 6

INGREDIENTS:

For the red layer:

  • 1 cup strawberries chopped, fresh or frozen and thawed
  • 15-20 drops of liquid stevia or 1 Medjool date pitted
  • 2 tablespoons water

For the white layer:

  • 1 cup Greek yogurt or full fat coconut milk, at room temperature
  • 1 tsp pure vanilla extract
  • 1 tbsp fresh lemon juice *optional
  • 10-15 drops liquid stevia vanilla creme *can be omitted

For the blue layer:

  • 1/4 teaspoon blue spirulina powder *optional for color
  • 1 cup frozen blueberries
  • 2 tbsp fresh lemon juice *optional
  • 15-20 drops liquid stevia *can be omitted

HOW TO MAKE IT:

  1. In a blender or food processor, blend the all the ingredients for the red strawberry layer. Carefully pour about 2 tablespoons into each pop mold. It should be filled about 1/3 of the way. Place the molds into the freezer for 40 minutes to set.
  2. Now combine the ingredients for the white layer in a small bowl, using either coconut milk or yogurt. Whisk to combine. Carefully pour about 2 tablespoons of the creamy mixture into each pop mold, over the top of red layer. It should be filled about 2/3 of the way. Place molds back in freezer for about 10 minutes.
  3. Combine all blue layer ingredients in a blender or food processor. Blend until smooth. Pour about 2 tablespoons into each pop mold over, filling the popsicle mostly to the top of the mold. Add the popsicle sticks.
  4. Freeze overnight and enjoy.

Note: You could pour in each colors layer without freezing in-between, but the popsicles will look more tie-dyed.
